My friend Angela suggested that I post my "how-to" (because it's really not a recipe) for candied almonds that I serve on salads. I make a frying pan full and then store them in a glass canning jar. Here's how I do it:
Set a non-stick frying pan on medium heat. Throw in some sliced almonds and sugar--whatever looks good to your eye. Stir it occasionally until you begin to see that the sugar is melting, then stir constantly. As the almonds begin to turn brown, take them off the heat, but continue to stir since they will continue to cook for a while. Allow to cool and place in a glass jar. Voila! Fancy and delicious almonds to add a sweet crunch to your salad.
