Why It's Good to Have Cold Cereal on Hand

OR . . . Don't Trust Everything You See on TV.

Lest I ever give the impression that I am a good cook who never fails, this was what happened to the waffle recipe I tried this morning:


I got the recipe from the Neely's on Food Network. The waffles came out flat, soggy, and burnt. Not wanting to waste the ingredients, I thought maybe I could make them into pancakes. Nope. The picture doesn't show how grainy the batter was. Not sure what I did wrong.

I did have the dry ingredients pre-mixed in the freezer. I discovered that brown sugar stays in a lump when you freeze it, so I took out the brown sugar lumps and replaced them with fresh brown sugar. The recipe uses two sticks of melted butter, which I had to read several times over to make sure I was seeing correctly. I've pre-mixed pancake dry ingredients with no problem, so don't know what happened here. I tried adding in more baking powder and baking soda hoping to give them a lift, but obviously it didn't help. I've got two more mixes in the freezer. Any ideas? Mom?

In my opinion... the problem is the two sticks of melted butter. I did a search for waffle recipes and most recipes that use a 1 c flour/1 c milk ratio, only use at most 2 tbsp of oil or melted butter.

So I wouldn't do anything to the mixes that you have the freezer. Next time you want to make waffles, simply cut the melted butter down to 2 tbsp. If the batter is a bit too thick, add a bit more milk.

I've had similiar problems with other recipes I've gotten off of Food Network. I don't know if the problem is the actual recipe or if the recipe wasn't typed up properly.

Yeah, the two sticks of butter just didn't feel right. I read it and reread it and couldn't imagine that much butter compared to 1 cup of flour. Thanks for the help.
