Summer Recipe

With the temperatures rising, my goal is to never turn on the oven. Our poor old a/c has a hard enough time keeping up without me pushing its limits. That's not to say that I don't cook (oh, how I wish), but I stick to stove-top and crockpot recipes. Here is a favorite:

Beef and Broccoli over Rice

1 pound boneless top round steak
3 Tbsp soy sauce
3 cups broccoli flowerets
3/4 cup red bell peppers
2 cloves garlic, minced
1 Tbsp cornstarch
1/4 tsp. beef bouillon
1/2 tsp dried crushed red pepper
1/2 tsp sugar
1 cup water
1 cup green onion, sliced
2 cups hot cooked rice

Slice steak diagonally across grain into thin strips; place in a shallow dish. Coat with soy sauce; cover. Chill 30 min.
Coat a dutch oven with cooking spray; place over med. heat until hot. Add meat and cook, stirring until browned. Reduce heat, cover and cook 10 min. Stir in broccoli, red pepper and garlic; cook and cover 5 min.

Combine cornstarch and next 4 ingredients, stirring until smooth. Stir into meat/veggie mixture. Add green onions; bring to a boil.

Cook, stirring constantly, 1 minute. Serve over rice.
